We love our summers in the Northeast! It’s hard not to think of summers without burgers on the grill. That said, I have had a few requests for how I grill a burger that tastes better than anything you get from a restaurant. This is a highly guarded CIA level secret, so if you tell anyone, we will send black helicopters to come for you.
- Always use 80/20 fresh hamburger (not patties).
- Break off a plum-size chunk of meat and smash between your hands to about a 1/2″ thick.
- The less you touch it the better. Don’t even pat down the sides to make it pretty.
- Thinner is better.
- Set each burner of your gas grill to about 70%.
- Grill the patties on one side (resist the urge to fiddle with them) about 7 min. or until the tops just start to turn from red to pink. Then flip. Note hot spots will affect each burger differently.
- The back side does not need much time: 3-4 mins, then add cheese for the last 40 seconds.
- Just one flip? Yes, The less you touch them the juicier and more tender they are!
- Get a good bun from the bakery not the bread aisle.

One day back in 2022, Spencer said in a staff meeting, “I want to think of a way to make billing a little nicer for our clients. Nobody likes to open a bill, especially for architectural services.” And thus, Spencerisms were born. That’s an internal name we initially gave these short notes Spencer writes to our clients each month, if they receive a bill. The name stuck, only because we couldn’t think of anything else that fit.
